Lunch of the Day
- Roughly chop a large tomato and a slice of cooked halloumi cheese and warm in a pan.
- Season with basil flakes, oregano flakes, salt and pepper.
- Toast wholegrain bread and drizzle with olive oil.
- Scatter the tomato & halloumi mixture over your warmed bread.
- Wash and tear up baby gem cos lettuces. Add salad dressing of choice (I used honey and mustard and added a few flakes of mature cheddar).
